1/4 cup diced red onion
1/4 cup red wine vinegar
2 Tablespoons Dijon mustard
1/4 cup vegetable broth
2 teaspoons olive oil
salt and pepper to taste
2 ripe tomatoes, washed and cut into eighths
4 oz prewashed lettuce
Whisk onion, vinegar, and mustard together in a salad bowl.
Add broth, oil, and a pinch of salt and pepper and whisk to combine.
Add lettuce and tomato to bowl and toss with dressing.
