1 1/4 cups green split peas
2 lbs spinach
4 Tsp veg. oil
1 onion, sliced
1 tsp grated ginger
1 tsp cumin
1/2 tspn chili
1/2 tspn ground coriander
2 garlic cloves, crushed
1 1/4 cups veg stock
salt and pepper
cilantro and lime wedges to garnish, if desired
Rince peas and soak them in cold water for 2 hours. Drain.
Cook spinach in large pan for 5mins, until wilted. Drain and chop roughly.
Saute onion, spices, and garlic in oil for 2-3mins.
Add peas, spinach, and stock. Cover and simmer 10-15mins until peas are cooked.
Season w/ salt and pepper, and garnish.
