1 1/2 cups unbleached white flour
1/3 cup unsweetened cocoa powder (or >1/2 cup sweetened cocoa powder)
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar (or 1/2 cup if using sweetened cocoa)
1/2 cup vegetable oil (actually, we've gotten away with 1/3)
1 cup cold water
2 teaspoons vanilla extract
2 tablespoons vinegar
optional glaze - orange compote
fresh seedless oranges and marmalade
Preheat oven to 375.
Add flour, cocoa, baking soda, salt, sugar into ungreased 8inch pan.
In a 2-cup measuring cup, mix oil, walter, and vanilla. Pour liquid into pan, and mix well.
Add vinegar and stir quickly.
Bake for 25-30 minutes, and enjoy!
