1 cup ricotta cheese
1/2 cup pumpkin puree
1/2 teaspoon salt
1/4 teaspoon nutmeg (I would add a bit more than this)
Consider adding sprinkling of cinnamon and/or pumpkin pie spice.
Make Matt's famous fresh pasta. Consider adding in a bit of pumpkin with some salt into the pasta recipe for color.
Mix cheese and pumpkin and spices.
Spoon filling evenly into cut ravioli shapes. Make sure that all of the air is out of pasta when sealing.
Serve with sage butter sauce.
