Popovers
Moist, easy to make, and full of exciting caverns of flavor.

INGREDIENTS

5 eggs
1 2/3 cup milk
1 2/3 cup flour
2 Tbs multed butter
1/2 tsp salt
1/8 tsp cayenne
3 Tbs grated parmesan + 3 oz grated cheddar or Gruyere, if desired
butter or spray for greasing muffin cups

INSTRUCTIONS

Preheat oven to 400.

Put eggs and milk in food processor and beat together.
Add in flour, melted butter, slat, cayenne, and Parmesan if using. Process for a few seconds.

Grease muffing cups. Distribute cheddar/gruyere among cups if using. Pour in batter, filling each cup about 2/3.

Put popovers into oven. Immediately reduce temperature to 375.

Bake for 50 minutes, until they are a deep golden brown.

Serves

12-15 popovers
