2/3 cup uncooked small pasta (Orzo, alphabets, or acini pepe)
4 ripe, medium tomatoes
1/4 cup chopped red onion
2 Tablespoons Fresh Lemon Juice
1 1/2 Tablespoons Olive Oil
Salt and Pepper to Taste
2 cups chopped, fresh mint
3 medium cloves garlic
1/4 freshly grated parmesan cheese.
Take a small slice off the bottom of each half so that it sits upright
Carefully remove pulp and seeds of tomatoes but leave shell intact
Chop pulp in food processor or by hand
Add Onion, lemon juice, and Olive Oil. Mix well.
Add mint, garlic, & parmesan to the pulp mixture. Mix until smooth.
Mix pasta with pulp sauce.
Spoon into tomato halves.
Leftover pulp mixture makes a good dressing for a salad. Consider using lettuce, white beans, and parmesan for a nice side salad.
