1 red bell pepper, cut into half strips
2 green onions, chopped
more than 1/2 large block extra firm tofu, cubed
1/3 cup lime juice (juice from 1 lime)
1/4 cup water with as much boullion as can be dissolved in it
2 T hoisin sauce (or substitute as follows: combine 2 cloves garlic, 1T soy, 1T rice vinegar, less than 1T sugar)
2 T soy sauce
2 heaping T ginger, chopped in food processor
less than 1/2 teaspoon red pepper flakes
1 bunch spinach
about 1/4 cup cilantro for garnish
brown rice for 3 (about 1 1/2 cups)
Put water on to boil for rice. Cook rice when ready.
Saute onion and bell pepper in some peanut oil until just tender, about 3 minutes. Remove to bowl.
Saute tofu in more peanut oil until golden brown. (Be patient.) Remove to bowl.
Combine sauce ingredients. Cook until liquid begins to reduce. Begin steaming spinach.
Add in tofu and peppers to sauce to coat and reheat.
Place bed of spinach on plate. Top with rice. Top rice with peppers and tofu. Sprinkle cilantro on top and enjoy!
