1 Tablespoon Oil
3 Medium Red Chillies, Chopped
2 Tablespoons Shredded Ginger
Lime Zest from two small limes
1 1/2 cups Red Lentils
3 cups (24 fl oz) Vegetable Stock
1 cup Thai Basil Leaves, Coarsely Chopped
Snake (Green) Beans
Chop Chillies, keeping most but not all of the seeds.
Rinse lentils and remove any stones or debris.
Heat Oil in Frying Pan over Medium Heat.
Add Chillies, Ginger, and Lime Zest. Cook for 1 minute.
Add Lentils and Stock to the Pan.
Meanwhile, Steam green beans and Chop Basil.
Cook until lentils are tender and cooked (about 15 minutes).
Stir in most of the Basil (leave some for garnish)
Place green beans artistically on a plate. Spoon Lentils on top. Garnish with Basil and Serve with a Lime Wedge.
Regular green beans make a fine substitute for the more exotic Snake Beans.
