Indian Spiced Spinach
A tasty or colorful Indian dish.

INGREDIENTS

olive oil spray
1 medium yellow onion, sliced (2 cups)
2 ripe medium tomatoes, ct into 1 inch cubes (2 cups)
20 oz (16 cups) prewashed fresh spinach
2 teaspoons ground cumin
2 teaspoons ground coriander
2 teaspoons ground cardamom
1/4 teaspoon cayenne pepper
1/4 cup pine nuts
4 teaspoons butter or margarine

INSTRUCTIONS

Prepare a large nonstick frying pan with olive oil and place on high heat. When frying pan is hot, add onions and saute 1 minute. Add tomatoes and spinach, cover, and cook 5 minutes. Remove lid, add spices and pine nuts, and cook another 5 minutes, uncovered. Stir in butter until it melts. Add salt and pepper to taste. Spoon onto serving platter and serve with Lentil and Rice Pilaf. (Start cooking lentils first)
