(this is for two cakes worth...about 1 1/2 pounds)
1/2 cup soy sauce
1/2 cup dry sherry
1/4 cup rice vinegar
3 Tablespoons brown sugar
plenty of fresh ginger to taste
Tobasco sauce to taste
2 cakes tofu, chopped
Long grain or basmati rice
some optional ingredients to consider: crused peanuts, lime juice, peanut oil, cilantro, Tobasco sauce or chili oil.
Begin cooking rice.
Add marinade ingredients to pan, and bring to boil for at least 1 minute.
Remove from heat and set aside.
Steam green beans.
When green beans are almost tender, add them to the tofu and sauce.
Add the rest of ingredients, and additional sauce and flavoring as needed, and cook until green beans are tender.
Serve over rice.
