Garbanzo & Vegetable Casserole
Light and satisfying spring/fall dish.

INGREDIENTS

1 Tbs. olive oil
1 red onion, sliced
3 garlic cloves, crushed
8 oz spinach
1 fennel bulb
1 red bell pepper
1 Tbs. flour
3 3/4 cups veg. stock
6 Tbs dry white wine
14 oz can garbanzo beans
1 bay leaf
1 tsp. coriander
1/2 tsp. paprika
salt and pepper
fennel fronds for garnish

INSTRUCTIONS

1. Saute onion and garlic w/ oil in large casserole. Add spinach and cook until wilted (4 mins).
2. Add fennel and bell pepper and cook 2 mins.
3. Stir in flour and stir 1 minute.
4. Add stock, wine, garbanzos, bay leaf, coriander, paprika. Cover and cook for 30 minutes. Season to taste, garnsih, and serve.
